Perfect Piña Colada
A
tropical blend of coconut cream, white rum and tangy pineapple – what’s not to love?

Ingredients: (Makes one glass)       

  • 120ml pineapple juice
  • 60ml white rum
  • 60ml coconut cream
  • A wedge of pineapple, to garnish (optional)
  • Handful of ice

Method:
Mix all the ingredients with a handful of ice in a blender until smooth. Pour into a tall glass and garnish.
 

Magic Mojito
With its refreshing flavor and zingy citrus kick, this timeless cocktail gets our vote every time!

Ingredients: (Makes one glass)

  • 1½ limes, cut into wedges 
  • 20 fresh mint leaves
  • 2½ tsp. granulated sugar
  • 65ml white rum
  • Splash of soda water, to taste
  • Fresh mint sprig, to garnish
  • Handful of ice

Method:      
Place the limes, mint and sugar into a sturdy glass and mash with the end of a rolling pin to release the lime juice. Next, add the ice and pour over the rum. Add a little soda water to taste, stir well and serve with a mint sprig.
 

Chic Peach Bellini
Light and refreshing with sweet notes, this mouth-watering tipple is a Summer staple. 

Ingredients: (Serves two)

  • 50ml of peach nectar
  • 1 tsp. fresh lemon juice
  • 30ml peach schnapps 
  • 85ml of chilled Champagne
  • 1/2 cup crushed ice

Method:
Mix the peach nectar, lemon juice and schnapps in a chilled glass. Add half a cup of crushed ice, stir, and add the champagne.
 

Cool Cranberry & Orange Refresher
If you’re often the designated driver, fear not- this delectable drink makes for a marvellous mocktail.

 

Ingredients: (Serves four)

  • 1litre cranberry juice chilled
  • 3/4 cup lemon juice
  • 1/3 cup sugar
  • 1/2 oz orange soda chilled

Method:
In a pitcher, combine cranberry juice, lemon juice, and sugar. Stir until the sugar dissolves. Before serving, top with orange soda and serve over ice.
